When they were able to capture and learn to use them they used three models. WInchester 30.30, Sharps Buffalo Rifle and Browning’s repeating rifle.

You can always build a diorama of the Promontory Point Golden Spike Ceremony, with the two steam locomotives meeting cowcatcher-to-cowcatcher… Models of both of those engines are widely available in HO scale I believe.

Or, you can build a diorama with a cutaway view of the snow sheds Central Pacific had to build through the Sierra Nevadas..

Those are the obvious ideas. I’m sure others can come up with many more.
